2024 Heathcote, Victoria - Carbonic Shiraz / 100% Carbonic Fermentation

JOSEPHINE'S NOTES: The fruit for this wine comes from the same meticulous grower and blocks at Heathcote that give us Big Girl Pants Shiraz.  We made a Big Girl Pants in 2024 too, but I wanted to try something completely different, and being small and my own boss, I was able to!  This was terrifying - I'd nevery done 100% carbonic fermentation in my 20+ years of winemaking, but I'm delighted with the results. Carbonic fermentation creates those distinctive fruity, perfumed characters by fermenting whole intact bunches in a completely oxygen-free environment.  If you're interested in the nerdy wine facts, Josephine will happily explain those to you! Limited to about 500 bottles - when it's gone, it's gone !
