When she's not in the store, Josephine is in the winery. Crafted from local grapes and finished with a distinctive hand-poured wax seal (often with help from her kids) Full Circle Wines are as personal as they are delicious.

  • YARRA VALLEY SANGIOVESE

    2022 Yarra Valley Sangiovese Region: Yarra Valley, Victoria Variety: Sangiovese
    LOOK: Bright ruby red with vibrant crimson edges
    SMELL: Fresh raspberries, ripe red plums, and fruit jubes with subtle savoury undertones
    TASTE: A bright fruit bomb with fresh raspberry and ripe red plum flavours, balanced by gentle tannins and slight savoury elements that give it complexity
    PERFECT WITH: Italian dishes, pizza, pasta with tomato-based sauces, grilled chicken, or charcuterie boards
    JOSEPHINE'S NOTES: I thoroughly enjoyed making this wine! It's definitely an Australian style of Sangiovese - a beautiful blend of bright fruit and those slight savoury elements that make it so interesting. This wine was matured in a giant egg (ask Josephine for details!) which gives it a unique character. It's vibrant, approachable, and shows what happens when you take an Italian variety and let it express itself in the Yarra Valley.

  • HEATHCOTE CARBONIC SHIRAZ

    2024 Heathcote Carbonic Shiraz Region: Heathcote, Victoria Variety: Shiraz - 100% Carbonic Fermentation
    LOOK: Vibrant ruby red with bright purple highlights
    SMELL: Fresh strawberry and red cherry with sweet confectionary notes and lifted floral aromatics
    TASTE: An explosion of juicy red fruit with strawberry and cherry flavours, complemented by candy-like brightness and silky, approachable tannins
    PERFECT WITH: BBQ pork, spicy Asian dishes, charcuterie, or enjoy chilled on a warm day
    JOSEPHINE'S NOTES: The fruit for this wine comes from the same meticulous grower and blocks at Heathcote that give us Big Girl Pants Shiraz. We made a Big Girl Pants in 2024 too, but I wanted to try something completely different, and being small and my own boss, I was able to! This was terrifying - I'd never done 100% carbonic fermentation in my 20+ years of winemaking, but I'm delighted with the results. Carbonic fermentation creates those distinctive fruity, perfumed characters by fermenting whole intact bunches in a completely oxygen-free environment. If you're interested in the nerdy wine facts, Josephine will happily explain those to you!

    LOOK: Bright ruby red with delicate garnet edges
    SMELL: Floral notes with strawberry, raspberry, and red cherry, complemented by nettle and earthy undertones
    TASTE: Bright and pretty with strawberry, raspberry, and red cherry flavours, balanced by savoury and earthy elements with gentle tannins
    PERFECT WITH: Duck, salmon, mushroom dishes, soft cheeses, or lighter game meats
    JOSEPHINE'S NOTES: This is my first attempt at Pinot Noir under the Full Circle label, and it lived up to all the hype about why winemakers love and hate making Pinot! There were times in the process where this wine brought me great joy and I thought I was such an amazing winemaker, and other times where it nearly brought me to tears. It's a lighter style Yarra Valley Pinot - still not my favourite wine, but the customers seem to love it and keep buying it! Sometimes the wines that challenge us the most... why don't you try it for yourself and you be the judge?
  • "BIG GIRL PANTS"

    2022 HEATHCOTE, VIC SHIRAZ
    LOOK: Deep ruby red with vibrant purple edges
    SMELL: Dark plum, warming spice and black cherry with hints of eucalyptus and subtle oak integration. 
    TASTE: Rich and bold through the mid palate with dark plum and black cherry flavors, beautifully balanced with warming spice and well-structured tannins.  Long and lingering with persistent spice and dark fruit notes.
    PERFECT WITH: Lamb, roast beef, hard cheeses like vintage cheddar, or rich winter stews
    JOSEPHINE'S NOTES: We've been working with this same block for a number of years now, and I think each year I understand it more and the wine just improves.  The name says it all - it's bold, confident and doesn't apologize for taking up space. Heathcote gives the Shiraz incredible depth and that beautiful peppery backbone that makes it unmistakably Heathcote.  It's got enough structure to age beautifully but drinks gorgeously right now.  Perfect for when you want a wine that comforts but with some serious attitude !

    2023 Central Ranges Chardonnay - "Duck" By Daniel and Josephine Region: Central Ranges, Victoria Variety: Chardonnay
    LOOK: Pale gold with green hues
    SMELL: White peach and tropical fruit with subtle vanilla and toasted oak, complemented by creamy malolactic notes
    TASTE: Stone and tropical fruit flavours extend to a creamy complex palate, with gentle oak integration from 9 months fermentation and aging in French hogsheads
    PERFECT WITH: Roast chicken, seafood pasta, creamy risotto, soft cheeses, or Asian fusion dishes
    JOSEPHINE'S NOTES: This is a collaboration between Dan and myself - two winemakers who met at our children's cricket! We wanted to create a Chardonnay that was balanced and approachable - food-friendly and appealing to everyone. It's gone through malolactic fermentation to give it that lovely creamy texture, unfiltered and unfined to preserve its character.
    Sometimes the best wines come from great friendships and shared passions. This one's a real crowd-pleaser!
